Not my mom's sweet and sour meatballs
I was looking for a recipe for meatballs and ran across this recipe. My mom used to make some awesome sweet and sour meatballs but I thought I'd try something a little different. This recipe was very good. It was a little more mild on the vinegar flavor than my moms so I may just try a little less vinegar in my mom's next time. I will be making this one again though. I'm going to be lazy and post my photos but please check out this blog here for the amazing recipe and directions. Next time I will make beef instead of turkey but you can do whatever you are in the mood for.
Ingredients:
Meatball Ingredients:
1 lb ground pork, turkey, or beef
1 egg
1/2 of small onion -finely chopped (I used 1 tbsp dry onion flakes)
1 small carrot-finely chopped
2 1/2 tbsp finely chopped cilantro (I used small amount of dry parsley because I didn't have cilantro)
1 tsp salt
1/2 tsp ground pepper
1 tsp soy sauce
1/2 tsp Worcestershire sauce
1 tbsp cornstarch
Vegetable Ingredients:
1 cup pineapple chunks-juice drained
1 small carrot sliced thinly
1/2 of small green pepper-sliced 1/4 inch thick
1/2 of small red pepper-sliced 1/4 inch thick
1/2 small onion-diced 1/2 inch square
1 tsp chopped garlic
2 tbsp vegetable oil for stir frying
Sweet and Sour Sauce Ingredients:
1/2 cup water
1/2 cup sugar
6 tablespoon vinegar
1/4 cup tomato ketchup
4 tsp soy sauce
3 tsp sesame oil
1 tbsp water and 1 tbsp cornstarch (as thickener)
Directions:
In a bowl, combine all the meatball ingredients. Set aside in the refrigerator for 1/2 hour. In a separate small bowl, combine water and cornstarch (thickener) then set aside. In a sauce pan, combine all the sauce ingredients. Place sauce pan on medium heat. Stir the sauce until it starts boiling. Add water and cornstarch thickener then continue stirring until the sauce start to thicken. Turn the heat off then set the sauce aside.
Meatballs Preparations:
Add water in a small bowl or cup, then set aside within your work area. Line a baking pan with parchment paper or lightly grease pan, then set aside within your work area. Pre-heat the oven to 375 degrees. Wet your palms with a bit of water from the bowl. Water will prevent the ground meat from sticking to your palm. Scoop one teaspoon ground meat, then place on your palm, mold each into 1 inch diameter balls with both palms. Place each meatball on the lined baking tray. Place in oven and bake for 20 minutes or until meatballs are golden brown.
Final Preparation:
Note: Do these steps only when the meatballs and sauce are already cooked. Place wok over high heat. Let the wok smolder a little bit before adding the oil. Add the vegetable oil. When oil is hot, add sliced carrots and onions, then stir fry for about 1 minute. Add minced garlic then stir fry for 10 seconds. Add pineapple chunks then stir fry for 1 minute. Add cooked meatballs then stir fry for 1 minute. Add bell peppers, then stir fry for 30 seconds. Add sauce and boil for about 30 seconds. Serve immediately with rice.
