Hamburger Casserole



This has been a recipe that my family has used for years.  It was one of my favorites growing up.  It is a very kid-friendly dish.  I used dehydrated chopped onions instead of fresh onion but you can use as little or as much as you want.  You could even use onion powder.

Hamburger Casserole

Ingredients:
                   
1 pound ground beef
1 green pepper, chopped (if desired)
1 large onion, chopped (I used 6 tsp dehydrated onions)
2 cans cream or regular corn with juice
2 cups shredded cheddar cheese
2 cans kidney beans with juice
1-10oz. can tomato soup (undiluted)
1 soup can water
1 tsp. chili powder
1 tsp salt
1 tsp pepper
4 c. uncooked pasta (macaroni or noodles)

Brown beef, green pepper, and onion.  Cook until vegetables are clear, combine remaining ingredients.  Boil pasta, drain and put back into pot.  Pour hamburger mixture to pasta and stir and then add cheese.  It will be a little watery but it thickens as it cools.  Serve with green salad.
