Chicken Katsu
This has been a family favorite for us, mostly on special occasions because it's fried. But it is super good. It's one of Aron's favorite meals and whenever we hit L&L Drive-In in Hawaii, that's the dish he gets. And he's picky about his sauce. His favorite sauce is at the Kaneohe L&L. So if you make your way to Hawaii, you will have to try L&L Drive-In for a good Hawaiian plate lunch. But of course if you can't make it to Hawaii, you can make it at home too. My mom also used to like Tonkatsu (made with pork).
Ingredients:
Chicken breasts, cut thin
Panko Japanese Style bread crumbs
1-2 eggs-mixed with fork
Flour (optional)
Oil
Tonkatsu sauce
(above is Panko flakes)
You have to dip the chicken in this sauce. It says "Tonkatsu Sauce" I saw a big container of this at Cash and Carry and you can find it at Asian stores or possibly in the Asian section at the grocery store.
Directions:
Pour panko and egg into separate flat containers. Pour oil into bottom of frying pan to cover with thin layer. Dip chicken breast into egg, then coat in panko (you may also do flour, egg, then panko but we skip the flour part sometimes and it turns out fine). Place into frying pan, cooking on each side until brown and not pink in the center. Let cool on a plate with paper towel on it. Serve with tonkatsu sauce. (you can also make a good dip if you can't find this at the store with ketchup and worcestershire sauce). The rice is served with Furikake (seaweed, salt, and sesame seed mix), which is a must in our family.
