Tortilla Wraps
I decided to make tortilla wraps as part of a baby shower lunch for a friend of mine. They turned out pretty good. You can be as creative as you want and add whatever ingredients you want. But I'll list the 2 recipes I found and the turned out pretty good. My personal favorite is the Turkey BLT wraps but the Feta Cranberry ones were a hit too.

Turkey BLT Wraps
Ingredients:
4 ounces softened cream cheese
1/2 cup light mayonnaise
1/4 cup finely chopped sun-dried tomato packed in oil
6 slices cooked bacon or 6 slices cooked turkey bacon, crumbled
3 large tomato or spinach tortillas (I used tomato)
1 cup chopped tomato, seeded
1 1/2 cups romaine lettuce, shredded
1/2 pound thinly sliced deli turkey
Directions:
In a small bowl mix cream cheese, mayo, and sun dried tomatoes. Spread mayo mixture over tortillas. Make sure to spread it to edge of tortilla to help tortilla hold together. Add bacon but be careful not to crumble it too much. Add a single layer of turkey over mixture. Top each with tomatoes and lettuce. Roll tightly and secure in plastic wrap. Refrigerated for one hour so they get firm. Cut each roll into 1 inch thick pieces with a serrated knife.
Feta Cranberry Wraps
Ingredients:
1/2 cup dried sweetened cranberries
1/2 cup dried sweetened cranberries
8 oz package cream cheese (remember to sit out before to let soften)
1 cup crumbled feta cheese
1/4 cup chopped green onion
4 large spinach tortillas
1/2 pound sliced deli deli ham
Sliced cheese (optional) (I made some with thinly sliced provolone cheese)
Directions:
Combine all ingredients except tortillas, mix well. Divide and spread mixture evenly among tortillas. Add sliced ham in single layer. Roll up tightly, wrap in plastic and refrigerate at least one hour. Cut into 1 inch slices. These held very well together after refrigerating. I probably should have taken out the "ends" but they still taste the same right?!
